OB Cuisine: Recipe Of The Day — Abby’s Cookhouse’s Ayamase Stew (Ofada Sauce)
Abby’s Cookhouse is showing us how she makes a tasty Ayamase or Green Ofada sauce as some might call it, eaten it with Ofada rice or just about any side you like.
Ingredients used include:
- For the meat:
- Meat (assortment)- 3100 g
- Fresh thyme leaves
- Ginger- a thumb size
- Garlic- 3 cloves
- Onion- 1/2 (medium size)
- Seasoning cubes- 4 knorr cubes
- Salt- 1 teaspoon
- Note: I used only 1/3 of meat boiled
- For the sauce:
- Green bell peppers- 5 medium/large size
- Red bell pepper- 1 medium/large size
- Serrano pepper- 10 (can be replaced with 1-2 habaneros or scotch bonnet)
- Red onion- 1/2 medium size
- Water- 1/2 cup to blend
- Eggs- 5
- Palm oil- 1 cup
- Crayfish powder- 1/4 cup
- Seasoning cubes- to taste
- Salt to taste
