Abuja-based cuisine addict, Chef Muse is sharing her easy peasy Mackerel Sauce. It’s colourful, nutritious and guaranteed to make your side dish experience wonderful. See the full recipe and method of preparation below.

INGREDIENTS

  • 1 medium size mackerel, cleaned, boiled and flaked
  • 2 garlic cloves crushed
  • 1 habanero pepper chopped
  • 8 very ripe tomatoes roughly chopped
  • 3 tablespoon olive oil
  • Salt and black pepper to taste
  • Few sprigs of parsley chopped

METHOD

  1. Heat a medium saucepan over medium heat
  2. Add the oil, garlic and habanero and sauté for about a minute or until fragrant
  3. Add the tomatoes
  4. Sauté for 8mins
  5. Add the flaked mackerel
  6. Reduce heat and let simmer for 2mins
  7. Season with salt and black pepper
  8. Garnish with chopped parsley
  9. Serve hot with pasta of choice, rice etc

Note: You can use fish of choice if you don’t like mackerel.
