On OB Cuisine today, we feature a delicious Jollof Coconut Rice recipe by Ronke Edoho of 9jafoodie.
The Jollof coconut rice can be used for different occasions; from parties and potlucks to entertaining at home and quick dinners. It is vegan too, which means no meat or chicken or animal protein.
- ¼ cup coconut oil
- 1 medium onion (thinly sliced)
- 1 can coconut milk (400ml)
- 2 knorr cubes
- Salt – to taste
- Ground pepper – to taste
- 4 heaped tablespoons crayffish (divided)
- 3 cooking spoons
- 1 – Nigerian stew base
- 3 cups rice – washed
