Food blogger, Uzo Orimalade is sharing how to prepare Chicken Noodle Soup on today’s cuisine episode. This Chinese/Thai cuisine is not only easy to prepare but has fast become a favourite in Nigerian homes.
According to Uzo, “My first meal of the day came together as a result of a small pantry and garden clean up exercise.”
“Stock made from random pieces of chicken, carrots, ginger, garlic, spring onions, black and white peppercorns, salt, mushrooms. Over low heat for an hour. Strained. Kale and Chinese celery from the garden added. Chicken bits put back in. Salt and pepper adjusted. Random egg noodles soaked in cold water for 10 minutes. Strained. In a bowl. Stock and chicken poured over. Delicious, light and so comforting. Omit the chicken for vegetarians. This soup works with seafood too. Make the stock using shells and heads of prawns and fish bones for that variation.”
