OB Cuisine: Recipe Of The Day — Abby’s Cookhouse’s Ayamase Stew (Ofada Sauce)

Abby’s Cookhouse is showing us how she makes a tasty Ayamase or Green Ofada sauce as some might call it, eaten it with Ofada rice or just about any side you like.

Ingredients used include:

  • For the meat:
  • Meat (assortment)- 3100 g
  • Fresh thyme leaves
  • Ginger- a thumb size
  • Garlic- 3 cloves
  • Onion- 1/2 (medium size)
  • Seasoning cubes- 4 knorr cubes
  • Salt- 1 teaspoon
  • Note: I used only 1/3 of meat boiled
  • For the sauce:
  • Green bell peppers- 5 medium/large size
  • Red bell pepper- 1 medium/large size
  • Serrano pepper- 10 (can be replaced with 1-2 habaneros or scotch bonnet)
  • Red onion- 1/2 medium size
  • Water- 1/2 cup to blend
  • Eggs- 5
  • Palm oil- 1 cup
  • Crayfish powder- 1/4 cup
  • Seasoning cubes- to taste
  • Salt to taste
